Today is Frugal Friday and I know after a long work week, the last thing you want to do is go to the grocery store to pick up some items for dinner. I know most of us don’t cook on Friday’s…well if you ask my husband, he would say that Friday is almost everyday in our household.This tip is not just for that Friday night meal planning, you can use this tip any day of your cooking week.
Instead of heading to the store, head into your pantry and fridge to find an entire meal your family will love. A few cans of beans here, some spaghetti sauce there, and before you know it you’ve got a meal. Here is today’s Frugal Friday Find for under $10
- Pasta- any brand but most cost around 50¢ for a 12-16 oz pack
- Crushed tomatoes 28 oz. at my Kroger for 19¢
- Ricotta cheese- okay you may not have this in your stash but you can use any cheese that you might have and it will taste just as good. $2.70
- Mozarella cheese or some other cheese of your liking
- Spinach- this is optional and you can use frozen or fresh. 2 for $5 fresh at Publix.
- Seasoning- whatever floats your boat, you already have this in your arsenal.
Preheat oven to 375°F. Spray a 9×13-inch baking pan with oil spray.
In a large pot of salted water, cook pasta according to instructions until al dente. Drain and return to pot.
Meanwhile, in a medium saucepan, add olive oil and sauté garlic. Add chopped spinach, salt pepper and crushed tomatoes. Season with basil, oregano, salt and pepper.
Add sauce to the pasta and combine the ziti. Add half of the mozzarella, Parmesan cheese and ricotta. Mix well then transfer to the baking pan.
Pour the pasta mixture into the prepared pan and spread evenly. Top with the remaining mozzarella.
Bake for 30 minutes, or until mozzarella is melted and the edges are lightly browned. Let it cool 5 minutes, then cut it into 8 equal portions.
